Success!
We got the tray out by removing the small power block on the front-right side, it allowed to reach the gears manually to get the tray out.
Then turning some more while sliding the black plate above the big black cog, we got the transport to move up.
A few power cycles later, everything works fine: Side A, Side B, all chapters, etc.

For the record...
To get access to the gears, we unplugged 2 connectors (1 white on top, 1 red at the bottom) and removed a screw above and below.

You can then access the white gear with the belt via the side (careful, the metal parts are sharp) and start turning it to make the tray start moving. It can then easily be removed manually.
To get the transport moving, we also had to push the black lever to engage the whole mechanism.

Then, as explained by Kurtis, you can easily slide the optical block close to the spindle in the center.
Reinsert the tray fully (you may have to spin this white gear a little more before reinserting the tray entirely), and power on the player.
Then everything worked again as expected: no more errors, all sequences sounded just as they should.

Mark forgot mention their 100V PSUs have been swapped for 120V PSUs.
