There is an ebook on books.google.com titled "Interactive Video Primer - Nursing Education" by Scott Alan Stewart that you might find helpful in searching for educational videodiscs. It also includes details of several graphic overlay and interface boards. i'm too lazy to create a short url which might seem to be a scam, but here's the link:

I was Director of Technology at Intelligent Images which is mentioned in the ebook. We created "Shotgun Wound to the Abdomen" and several other interactive educational laserdisc based titles for nurse education and training. As already mentioned in this thread, these and most educational or training videodiscs were not sold to consumers so it will be very difficult to compile a list.
