I absolutely love Fleetwood Mac - I have all their albums.
Although the discovision title was quite poorly filmed it is still a personal favourite. You will likely need to buy 2-3 copies though to get a good playback copy on both sides as it is quite prone to rot.

The last Japanese pressing of Tango in the Night with the top edge OBI has a more matt finish in comparison to the other editions available which are really glossy.
I guess this is reflective of the price as it was the cheapest by far.

The US edition (second photo, top left) of Stevie Nicks Live in Concert (1982) was the very first laserdisc I ever bought so that one brings back some special memories.
It suffered from some mild laser rot but that didn't put me off as you can see! There have been many different releases of that same concert over the years.
It would still be one of my all time favourite laserdiscs because of the track 'Sara'.

There is of course the little US 8" of the Stevie Nicks 'I Can't Wait' also available which I have photographed elsewhere.

The Bob Welsh concert is another gem worth tracking down. Ann Wilson from Heart even makes an appearance on that one as does Christine, Stevie and Mick!

Billy Burnette was guitarist/vocalist with Fleetwood Mac during 1987 - 1995.

Which Tango In The Night edition is best? Also do any of their Laserdiscs have Big Love, Chain and Family Man on the same disc?

I'd recommend the 2nd Japanese pressing as it is cheaper in price and much easier to locate.
Fleetwood Mac: Tango in the Night (1987) [35P6-9029]

It also has a thick Japanese cover unlike the UK or US editions. The UK version is made by PDO so can suffer from rot. The 1st and 2nd Japanese pressings both have the luxurious glossy cover unlike the final 3rd Japanese edition which looks much cheaper in comparison as it is matt in finish.

No single Fleetwood Mac LD has all the tracks you mention, however this one is probably the most varied snapshot of their career:
