Since the potentiometers and now past the point of calibration guess work won't help... You really need an oscilloscope and potentially a frequency counter to get the colour subcarrier correct. It changes from 4.433Mhz in PAL to a different frequency in NTSC. Because the re-calibration process usually has to be done in a specific order (per the service manual) it impossible to do it by guesswork or looking at the LD output..Some of the calibration must be done in service mode I've found. Sorry to be the bringer of bad news but moving pots without first marking their original position can cause huge headaches and frustrations.. I made that mistake a while back when I was new to this world
In some instances it's just a tiny tweak that can throw off a colour decoder stage because the decoders need to be calibrated to precise frequencies. Crystals usually are fixed and oscillate and fixed frequencies if you had a scope you could see if the crystal was working and near the frequency it should be. Do you have a service manual for your CLD-A100? if so that should have "Electrical" adjustment section that walks you through setting up the video circuitry. Mine is a CLD-1750 and honestly I've not touched the electrical bit because I don't have the right tools/equipment and I am a trained TV repair engineer.
Replacing the electrolytic caps is a good thing to do IF it's proved to be degrading or stopping the signal. There are ESR meters on ebay to detect high resistance electrolytic caps without the need to desolder the cap

1: See if you can find a service manual.
2: See if you can get help of a local repair shop to set up the colour decoders again to factory specs.
